Whole-Wheat Bread
Makes 4 loaves
This basic bread recipe is one I use regularly, cycling it out with the Seedy Whole-Wheat Bread.
In large mixing bowl, place:
6 cups 100% whole-wheat flour*
4 cups white flour*
1 tablespoon salt
2 tablespoons yeast
Stir together, make a well in the mix, then pour in:
1/2 cup honey
6 cups warm water
1 glug of white vinegar
Mix and knead in as much whole-wheat flour as possible, until the dough is the right consistency.
Let rise till double, form into 4 loaves, let rise until double.
Bake at 400 for 35 minutes, until bread is golden brown and sounds hollow when tapped.
*If you're using 100% whole-wheat flour, you'll need the white flour or additional gluten. I made this for years thinking I had 100% whole-wheat flour when I was actually buying "whole-wheat flour" which legally (in Canada, anyway) can have up to 40% white flour in it. I was making bread very successfully with no additional white flour and thinking it was 100% whole-wheat, but it wasn't. It made me angry when I found out!
