Roasted Tomato Sauce
Makes about 4 cups.
This easy, tasty sauce is great on pizza or over pasta. Since I discovered this method a couple of years ago, this has become my very favorite sauce. If you use regular tomatoes in this, the sauce will be far too runny and you would need to add some tomato paste to it to thicken it up, diluting the roasted flavor. I make multiple batches of this in September and can the sauce for winter use.
Turn oven to 425.
Place the following ingredients in a metal roasting pan:
10-12 ripe roma tomatoes, halved
5 cloves garlic, peeled and left whole
1 medium onion, peeled and quartered
Drizzle the vegetables with:
1 tablespoon olive oil
1/2 teaspoon salt
freshly ground black pepper
Stir to ensure the oil and salt surround every bit of vegetable.
Place in oven and roast for about 30 minutes, until tomatoes are soft and starting to brown.
Puree in blender or food processor. If you're using this for pasta sauce, puree in:
2 tablespoons fresh snipped basil
1 tablespoon fresh snipped oregano
