Freda Soup

Freda Soup

  In the early 1980s my dad was in Vancouver General Hospital for hip replacement surgery.  My mom boarded with a woman named Freda who lived near the hospital so she could be near Dad during his recovery.  Freda introduced this soup to my mother and it has been a family favorite ever since, with very little adaptation to changing times.

 

1 pound of lean ground beef, browned in large heavy pot. 

 

Then add the following:

2 cups sliced carrots

1/2 cup chopped celery

1 medium onion, chopped

1 pint (2 cups) canned tomato pieces

1/2 cup barley

1 can deep-browned beans in sauce OR 1 can beans (kidney shown) plus 1 tablespoon molasses

1 cup French-cut green beans OR peas

6 cups water

2 teaspoons salt

freshly grated black pepper

Bring to a boil, then simmer for about one hour.  This soup tastes just as good the next day, if not better, or can be frozen for use within the next month or so,
